Key Lime Pie... Oh My!!

I made this Key Lime Pie a few weeks back for our friends anniversary and they all said they loved it.  She even told me it tasted just as good as store bought (from her thats a compliment). Then I also made it for our other friend who helped me get my car registered. She absolutely loved it, and then her son and daughter in law never saw it again. So this is a good recipe and not too too difficult.

Key Lime Pie

Crust:

  • 1 1/2 cups of gram-cracker crumbs
  • 1/3 cup sugar
  • 6 tablespoons butter melted

Filling:
  • 2   14 ounce cans of Sweetened Condensed Milk
  • 1/2 cups sour cream
  • 3/4 cup lime OR key lime juice (whatever you have will work all the same)
  • Zest from 2 limes or 4 key limes

Whipped Cream:

  • 1 cup whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon of vanilla

  1. First step is making the crust. Of course you can always cheat (it's okay I won't tell anyone) and buy the gramcracker crust from the store, but who doesn't have gram crackers at there house. Blend them up, whether you use a food processor or a blender make sure you have 1 1/2 cups. Put that into a bowl and add 1/3 cup sugar and the melted butter. Mix it all until it looks like wet sand. Push them into a pie pan. Make sure there are edge up the side to give adequate crustage. Let that bake at 375 for 7 minutes then let it cool for 30 minutes.
  2. Start the pie filling. The first thing you will want to do is mix the Sweetened Milk, sour cream, lime juice and zest together and make sure it is completely combined. Pour it into the crust and let it bake for 10 minutes at 350 . Let it cool for 3 hours minimum or the whipped cream you will make next will melt and it will be a hot mess.
  3. Now to do the whipped cream beat together the cream, vanilla and sugar until you get stiff peaks. Beware not to over beat it. No one likes butter on top of their Key Lime Pie. Once the cream is whipped you can either spread it on or pipe it on. Piping looks fancy so I piped it on using a drop flower tip just so I had small flowers around the outside then one in the middle of the pie. Then, depends on how you like to decorate though, I personally like to showcase what type of pie it is so I cut up the lime and sectioned it out and put a section of lime on each flower on the outside, then sliced a whole lemon slice and put it on the center flower.
See!!! I told you it wasn't that difficult and it will yield awesome results!
